sit-on-top double

I like the idea of a S-O-T for warmish water paddling/diving. S-O-T singles however are either speed compromised by being excessively beamy, or stability compromised like a surf-ski. I am planning a scaling up of Nick's S&G Guillemot by 25%, doubling displacement and increasing stability by 2.5x, to 21'4" x 26". The crew would be accomadated in an open self draining cockpit on about a 6' pitch to allow independent paddling. This boat would be fast enough to hang in there with conventional singles on club trips, and I'm hoping stable enough to allow the crew to sit their backsides at about sheer level (approx 2" above LWL) allowing self draining to a slightly lower foot level and then overboard. The actual sequence of S&Ging the "cockpit box" , bulkheads, hull and deck panels together is a bit of a challenge but I think I can work something out. Has anyone one out there thought about /done anything similar? In particular am I somewhere near the mark expecting, say, Guillemot single levels of stability with the above configuration?
