Kayaks for big guys

I am building a Auk for my lady buy since I am a LOT LARGER (6'4" & 290lbs) I want to find the easiest way to increase the displacement of the boat without making it the size of a double or as wide as a raft. I want to be able to load it with gear for week+ trips as well. Any help would be appreciated Ron
