David , if I understand you correctly you are thinking of squeezing the sides of the boat together and raising the deck beam in order to get more foot room?

That would put negative rocker into the boat and make it a very odd paddling kayak. my two bits:

1. stretch, it will help no matter what kind of cockpit set up

2. make the most comfortable seat you can, under thigh and around the butt

3. the most effective and challenging solution is to make a couple bulging foot cutouts, you could paint them like alligator eyes, this may sound ridiculous but I've seen it,not the eyes, and it works.
