I'm not the expert that some of these guys are, but I quite like my Patuxent. As a mid-pack recreational racer, I have found that the Patuxent is as fast on me as some quick surf-ski's like the Valhala Viking International (Which I also quite enjoy). I'd ask Chris over at CLC what he thinks about narrowing the Patuxent. Lengthening doesn't make much sense to me.
At 180 lbs. the Patuxent would probably be a little high volume for you. A 230 lb. friend paddles mine and the boat trims out nicely. It's stable enough for 2 plus foot wind chop, so narrowing it should be fine for flat water.
In summary, to me a narrowed 19 to 20 inch Patuxent 19.5 sounds like a fine idea for a guy with your size, experience and ambition.
