You could do a lot worse than the Patuxent 19.5. (I have the 17.5 version.) You'll get a lot of straight line speed out of a boat that's quick and easy to build.

As for "how long is too long," it's going to depend on how much power you can generate. As long as you can provide the power, longer is better. Unless you have access to some sophisticated measuring equipment I think it's going to take some trial and error to find the optimal boat length. It might be worthwhile to see what other people are paddling in long distance races and try to match youself with successful paddlers of similar physical characteristics.
