I built a Panache last year. I haven't had it out enough to comment on its handling in too many situations, but here's what I've found:
* It tracks very straight. The only reason you might want a rudder is to turn it. Where my Guillemot turns on a dime, the Panache takes multiple boat lengths to turn. * It does respond to leaned turns, but it's not a dramatic difference. * Very stable secondary stability due to the flare above the waterline. You easily become very confident in leaning the boat. * Not too much weathercocking, which is surprising considering the upswept bow and stern. (One day my wife was in the Panache and I was in the Sitka. The strong wind forced me to keep the boat on edge and use corrective strokes. I looked over at my wife and she was contentedly paddling straight as an arrow as if there were only a breeze) * The high-volume bow lifts over waves.
