With everything else equal the following make a boat turn more easily when heeled: greater beam, higher block coefficient(Block coefficient is the volume of the boat divided by the volume of a block having the same beam, draft, and length), rounder sections at stern and/or more rocker (probably more complicated than anyone wants to read about here), shorter waterline length, and deeper chines forward, etc.
