I built the first one stitch-and-glue using the expanded panel offsets from the software. I did end up doing some fairing with a batten--don't know if this was needed becuase of inaccuracies from the software or because the design as viewed on my tiny computer screen wasn't fair in the first place?
For the second boat (the punt) I used the table of offsets (not the expanded panels) to loft the boat full size. I tweaked a couple of lines and then built the boat over a form with three molds plus the two transoms. Having tried both methods, I don't think I'll use stitch-and-glue again.
