When I first tried out design software the use of points on the hull appealed to me because of my years of lofting. The lack of clutter on the screen (vertex lines plus isolines) made veiwingt eh scren a bit of a struggle since I had no experience with CAD programs. The DOSversion of Nautilus only used points on the hull.
When the Windows version surfaced I tried using vertex points and, like Nick, found them easier to use in fairing the hull. I still use points on the hull when digitizing old designs etc. and also find them easier to use for stems and some detail work but hull fairing just seems to go easier with vertex points.
