If you want a reference that gives kayak proportions in terms of body parts, try Wolfgang Brink's book on building skin-on-frame baidarkas. It is an interesting book and does break down the proportions of a kayak in terms of arm-spans, hand-breadths and the like. Personally, I prefer a boat about 188 nose-lengths long.
