As I understand what you are proposing to do, you are cutting off the end of the boat and reconfiguring it. This will reduce the buoyancy of the stern causing it to sink lower in the water which will in turn raise the bow out of the water. This will cause the center of lateral effort to move backwards. This is sort of like moving the feathers on an arrow farther back. The boat will tend to paddle straighter through the water. However, now the bow will be higher out of the water so the center of lateral effort the wind sees is moved forward. This will increase the boat's tendancy to lee-cock (point down wind).
You generally want to keep the designed balanced. You may find the balance is thrown off and the boat becomes hard to paddle.
