It is a little hard to visualize exactly what you have in mind. It does not sound like you are making changes that will significantly change the performance. Performance in the water depends on what touches the water. From the sounds of it, the changes you are thinking of will have more effect above the waterline than below.

An Aleut baidarka has a somewhat fuller stern than other designs. This is more than just chopping the end off. There is nothing particularly magical about the bifid bow for a plywood boat. You would probably want to reduce the rocker in the bow to make it have an effect.
