Glen-L and ClarkCraft both sell plans for such boats.
Their web pages can get you more info on how to order their catalogs, and have a few designs online that you can read brief summaries of. Both of them have designs online that might tempt or inspire you in the 18 to 22 foot range. If that is not enough for you, send them a few dollars for the complete catalog. The catalogs have a lot more info. and many more designs.

Both of these companies sell plans for boats that can be equipped with whatever cabin or sleeping arrangements you want. My impression is that once they get a design for a decent hull the designers then make a bunch of different designs for decks, cabins, wheel placement, etc., which they sell as separate plans. Of course, since you are building your own boat you can build any kind of cabin or other bunking arrangement you desire, however you desire, and just about wherever you desire.
In additon to plans both companies sell building supplies and kits. Some of the kits are complete, and some are just the pre-made frames, which you just have to align and plank (usually with plywood sheets) to form the hull.
