I wouldn't sand it for at least a week, epoxy takes a long time to fully cure

I agree that epoxy continues to harden for some days, but I've never had to wait more than 12 hours to start sanding unless I let the shop get cold. Sometimes, if I've allowed less cure time (or the shop has cooled) and the epoxy is 'trying' to clog the paper, I'll switch to wet sanding.
What epoxy system are you using, and what's your shop temperture?
