I think it is perhaps more important to realise the particular likes of the well-known designers, and appreciate that any of their kayaks are likely to reflect their taste.

It depends on the designer, I think.
I understand that Bjorn Thomasson usually paddles a Njord - a 'Greenland 'inspired' boat - and uses a Greenland paddle, when he's paddling for 'fun' or teaching.
However, he's designed commercial surfskis and fast sea kayaks which are generally paddled with a high angle Euro or wing paddle. His catalogue of designs for amateur builders is quite varied.

The best answer to simple questions about 'speed' or stability' is probably: "It depends, please elaborate".

One thing I do appreciate from any designer is a very full set of 'numbers' as well as a study plan on the web page. There's a huge variation in that, from quite complete information all the way to 'trust me, it will be great'.
