A lot of backrests attach to the seat below or the coaming or cheek plates to the fore- I'm thinking of attaching it to the deck from behind.

Have you already set the bulkhead in place?
You can attach a foam block to the bulkhead for a backrest. I think that the Redfish seats often use this.
The closer to the coaming you set the bulkhead, the more compact that foam backrest can be.

However, this doesn't solve the problem of access via an inspection plate in the bulkhead if that is still your plan.
