My thoughts are similar, but I am also thinking that I would like to delete the galley, and have the door open, exposing a tent sides, with the door as the roof, kind of like a popup camper. That would give me room for my greyhounds. For galley, a friend of mine has a business building safes, and he makes super heavy duty full-extension ball-bearing drawer slides. You could mount the "cab" of the trailer on top of a rectangular box, and have a drawer that slides out with galley and storage.

I'm learning to use 3-D modeling software. As soon as I'm done with the project I NEED to to I'm going to continue honing my skills by working on a project like this.
