I'm probably going to regret this, but I've been a bit confused about this for a while now.

THE ONLY sanding needed with a ROS is to round the high points along the strip joints and to smooth the surface for finishing. Each strip is perfectly fair, just as a plywood panel on a stitch and glue boat is perfectly fair.

I think this is the issue that Patrick is referring to. Where I get confused is IIUC in general when people talk about "fairing" the boat they mean both creating a "fair surface" and smoothing angles to create "fair curves."

I understand and appreciate that if a strip is out of alignment - i.e., "sticking up," that you now have neither a fair surface nor a fair curve. However, if I join two strips together with a perfect 45 degree miter, the inside and outside will be "fair surfaces," but I have created a 90 degree "fold" not a "fair curve."

In looking at my hull, after sanding I have a "fair surface," and in a fore-and-aft direction it also has "fair curves." However, going around the circumference, it's a close approximation of a fair curve, and it looks and feels smooth, but if you actually put a straight edge against the hull you can see that some of the strips still have flat spots. At the turn of the bilge where the radius is tightest, in order to "ease the corners" of those edges I had to remove enough material that I was basically rounding over the entire strip - so that's a fair curve. For shallow bevels, though, just easing the corners leaves the center of the strip flat.

So first off - is that "wrong?" Do most people continue fairing such that all of the strips are fully rounded-over with no flat spots?
