If using a large can of varnish take out what you are going to use for the next couple of hours then reseal the large can. Oxygen is what makes varnish skin over. When sealing any can of varnish set the top in place on the back edge of the can and tip it to within 1-2" of being closed. Gently exhale into this opening two to three times. This replaces the oxygen in the can with carbon dioxide. Carbon dixoide is heavier than oxygen so exhale gently and it will settle to the bottom of the can - top of the varnish - forcing the oxygen out. Then seal the lid by setting a board across the top of the can and moderately rap the board with a hammer setting the lid flush with the outside of the can. This prevents the top from being set to deeply and deforming the top allowing oxygen back into the can.
(I have seen some amazingly distorted can lids from beating on the lid with a hammer thinking more is better :(
I buy varnish by the gallon and lasts me about 6 months, cannot remember the last time I opened a can that had any skin on it at all.
