I bought some rough cut 2x6 AYC. I used a re-man saw to cut it into 3/4"thick board's. After cutting all my strips I noticed that they are not all 3/4".

I don't know what a 're-man saw' is, but...
Are you saying that your strips have consistent thickness and straight square edges, but are different widths, depending on which board they came from?

I'd just separate them into bundles according to width, and use them in pairs as you work on the boat, to keep things symmetrical. Narrow strips are good for curves, wider ones for flat sections - it's an advantage IMO to have some choices.
