I'd use epoxy for sealing the plywood.

What weight of plywood are you using?

You should get the epoxy/ not epoxy argument starting now.
How long do you want it to last?
With a boiled linseed coating on the frame I'm not sure its worth doing epoxy on the skin.

Have you already planked the boat?
