Personally I'd use auto filler to fill the gaps, yes it'll bond pretty well, fair it glass it and paint it. I would put spreader sticks on the gunwales first and maybe a longitudinal strip down the middle to try to hold it's shape. It's pretty round in shape so once the gunwale is secured should hold it's shape fairly well while fairing and glassing it.

It might be a bit tender in the water, might plan on sitting on the bottom and padding it at first.
