You can cover in really light canvas, like their 7 ounce, but it's pretty fragile easy to tear. 10-12 ounce I'd suspect would be better. You want untreated canvas if you're going to do this, no good way to shrink pre-shrunk canvas otherwise.

The downside of using canvas is you really have to insure it's well dried after each use or you'll get rot, though if you only paddle on salt water that's less of an issue, the salt helps to prevent rot.
