Here are some thoughts:

Cut opposing recesses in the tool so you can switch the plane to cut in either direction. You may need to make a filler block to fill the empty cavity. It would need to have steel plates on both sides.

Mount two planes in opposite directions. The blades will only cut one way and having a non-cutting blade riding on the wood shouldn't be a problem.

Make the tool only 1/4" thick. The plane has a full-width blade according to Lee Valley, so it should work fine in either direction. Holding the plane to the tool could be challenging, but considering that it would only need to be removed occasionally for sharpening, a more robust mounting method should be workable. If the blade can be removed from the plane easily, perhaps the plane body could be permanently installed in the tool.
