One thing to remember about sanding epoxy is most epoxies continue to cure for quite some time, up to 30 to 45 days depending on temperature and humidity. If it's fully cured it's no more issue than any other sanding dust, if it's not fully cured you can be breathing still reactive epoxy, not a good thing.
