Strobe vs. lighting

Try both. It only takes a second to try the on-camera strobe or shut it off.
Todays cameras are designed by engineers not photographers and sometimes the strobe shot will be best and sometimes just the natural lighting of your work area will be best. A strobe shot will often make the background go dark which can be nice. Personally I like seeing peoples shop and clutter. I can relate to that. I remember when someone shot their boat in progress and there was this old sprite sports car sitting there which triggered a discussion.
