I've never built a paddleboard but have built many other wood epoxy boats. Leaving one side unsealed is asking for problems. The normal problem is rot between the coated side and the wood right where you can't see it until the wood turns to mush. Then the repairs are not fun.

Easier and safer to seal both sides to start with.
