The biggest reason to use marine plywood in boats other than it being water proof is that it bends well since there are few if any voids. Since the use in a fuselage kayak the plywood is always flat, there really isn't a need to use marine grade ply, good exterior grade ply will work just fine. The ply isn't in constant contact with water and is flat.
