I'm assuming you are talking about a US13 size foot. If so, I have the same size feet and found the Chez17 to have ample room. Stripped decks on a ches ( or any kayak) are very straight forward if you stick with a cambered deck.
Just tack in some forms, use the same radius guide as for the sheer clamps and Mark out the forms, remove and cut, hot glue back in to place, start stripping.
OneOcean Cirrus is also good and a much better looking boat IMO.
