If you're using an internal stem as well, its relatively easy, just plane (sand) back the strips to expose a straight square edge then once the external stem is epoxied on, plane to match the hull's profile.

If no internal stem is used, you can fill the ends with a heavy thickened epoxy filet then do the same as above.
