I agree, I've made several Greenland paddles and have taught a couple classes making them and I just use the same thing, planes and sanders. I do have a spindle sander that helps with the shoulders.

Still if you want to take the time to learn to properly use a spoke shave and possibly a draw knife, it's great fun, but it's a fairly steep learning curve. I'd rather paddle.
