Strip: What wood...

just out of curiosity, I note that most strip kayaks are made with cedar and some walnut/poplar accents. I've built a fair bit of furniture for my family and for some friends, mostly in cherry with odd pieces in bubinga or walnut. Aside from weight, is there any reason why one wouldn't use wood like cherry to build a strip kayak? I would think that cherry strip kayak properly glassed/epoxied and varnished would be just gorgeous.
