I don't know. In 15 years working as a cabinet maker I've built my fair share of stuff out of pine. In my experience it doesn't matter what you cover it with, it will turn orange eventually. Oil, wax, nitrocellulose lacquer, varnish, shellac, epoxy, pre-catalyzed lacquer, catalyzed industrial coatings like Chem-var. Doesn't matter. Just because you can expose fresh white wood when you sand it doesn't mean that it's the coating that's turning colors. It just means you've sanded down to fresh white wood. I've got some pine from a 19th century barn that is dark dark brown. If I run it through my planer it's creamy white just like fresh stuff at the box store.

As for other woods- yes, holly stays white. Maple turns yellow. Don't really know about aspen. Basswood stays almost the same color.

If you can wait a few years the color pine ends up is fabulous. I love it. I have a bunch of furniture in my house made out of rustic pine, and it's beautiful.
