In both my strip canoes, the first 8 or so strips are beveled (3 degrees on the table saw), the strips around the soft chine are b&c, and the remaining strips on the flatter bottom are again beveled. Transitioning between the two isn't difficult. B&C gets difficult as you fill in the football so bevels work better. Accurately beveling the more extreme angles can be difficult, especially for a beginner, so B&C was easier for me at the most rounded stretch.
