I prefer bevels, but I am filling my less than perfect bevels on the inside of a Kayak.

If I was doing a canoe I might reverse everything I have said here due to that issue.


+1 on that.
When I built some canoes, I used B&C and it worked well for them, though I still had the 'issue' of transitioning when planing some strip ends.

As Ken says, I'd use a larger-radius cutter (i.e. bigger than 1/8R on 1/4" strips). Playing around with cardboard strips of the cross-sections involved will show the situation clearly. With R=0.5*strip thickness, the joint starts to wedge open as the bend gets sharper. Bigger R on the cutter helps a little, IMO. With WRC it's probably not a big issue, as the wood is soft enough to compensate some.

However, I know some folks are very particular about those glue lines... ;-)

You can also plane off a bit of the cove 'lip' on the inside of the curve, but then you might as well be bevelling, IMO.
Coves are nice for holding glue if you are gluing strips with wood glue as you go.
