Strip: Sequence question (coaming)

I recently got a recommendation the sequence of building my first guillemot kayak. I have the inside and outside of the hull glassed at this point. The deck is prepped but not glassed. The recommendation was to glass the internal half of the deck, then attach the deck to the hull leaving the outer deck unfinished. The last step was to glass the outer deck to generate one edge between the deck and hull. Using this method was thought to allow more cleanup of the outer seam.

My question is, how do I do the cockpit coaming using this process? Seems like I'd have difficulty making sure that everything was nicely glassed. Thoughts, please?
