S&G: Faults in S&G technique

Some years ago I optimistically designed a built a S&G sea kayak similar to a Chesapeake 17 LT with very little prior experience and a poor understanding of conical development. The kayak turned out less stable in some conditions than I expected. I recently noticed that the chines did not bend out into the designed curve towards the bow and especially towards the stern. This has resulted in a deeper V being pushed into the bottom panels especially towards the stern and bow. Have other S&G builders had the same trouble? Could I have avoided this by using spacers between the chines towards the stern and bow at the stitching stage? Perhaps the problem is entirely due to my less than perfect design of the bottom panels. Please forgive me if this topic has been discussed before, I have not followed the forum for some years.
