A picture would help, I haven't built a Guillemot.
The typical way to deal with high curvature is to make the strips narrower.

I just had the same problem on a Great Auk 14 and went to 3/8" wide strips.
Actually in the rolled gunwale area I went to 1/4" strips - a great pain in the rear.

There will be someone who has built a dozen of these, probably soon.
