However, a kit puts me out of my price range for "first kayaks." Maybe a build from scratch will also, but I'm simply exploring options.

I'm not trying to sound discouraging, but don't overlook the 'other costs' involved when you are looking at the 'boat budget'- some you can DIY or improvise, but again, it's tough to do a good job when you don't have examples in hand to copy:
Paddle
Sprayskirt
Appropriate clothing - which in the Great Lakes any time or any lake until August (?)would be a drysuit or wetsuit/FarmerJohn, IMO
Footwear
PFD
Paddlefloat
Spare paddle
etc etc etc...
and lessons....
