Lots of the same request.

Check out yostwerks.com for simple lightweight kayaks.
I suggest the SeaBee 13 if you want relatively short.

Or try Dave Gentrys 12' boat http://www.gentrycustomboats.com/C12%20page.html a little heavier, wider, possibly easier to build, but I haven't done one.

Or you could go direct to the source at Guillemot Kayaks, shown on each page here.

For all wood, stitch and glue from a kit will be fastest and easiest.
For lightest it will be the skin on frame (SOF)
For prettiest it will be Strip planked. also check laughingloon.com or redfishkayaks.com
