The course will probably be a good start.
A better start would be someone local you can sit with and talk about things. And then ask questions repeating what you discussed.

A very good start for me was to build the first 4 feet of the kayak you want, just for learning. Since you know you will not be using the short section for real you will have the confidence to go ahead and make your mistakes, at low cost and relative short time frame.
You can even do it twice (or more) if you want to examine alternatives.

My first strip kayak was Rob's Northstar.
I built a "nose" and a stern since those were the hardest parts of the boat.
I spite of that I rebuilt the nose more than once for the actual boat.

You might be much better than myself, but you will still benefit from having a "free" trial. It can be easily hidden due to the small size. It will also speed up the full sized boat since you will have some experience.

Actually, I suspect you will fail with hiding the full boat, unless the shop is hard to get to.
I built a double for a friend and he couldn't even hide the paddles he ordered early.

PS you can turn the "bow" trial piece into a moose head like trophy for your shop, and have a conversation piece! You will be surprised to find how much you use it to explain your new obsession to friend, aquantinces, and casual visitors in off the street.
