John,
Thanks for the advice. Answering your question about building, I am skilled at building furniture, but am not familiar with the techniques that transfer to boating. I will do some reading online and other posts to determine which is the best for me. As for the watercraft of choice, it will likely come down to the course (if I can find one in the region). If not a course, then likely one that allows me to leverage the tools I have on hand, forms, fixtures, etc.

With your furniture woodworking background, I don't know how rewarding you will find 'modern' kayak building. For me, there's not a whole lot of interesting woodwork (aside from tapering and fitting strips) in a strip kayak. And quite a few woodworkers I know do NOT like working with epoxy and fiberglassing, which is a big part of strip or S&G kayak building.
Perhaps a more traditional project would give you more woodworking fun?

I'd also recommend building something that you know you will use - no matter what you choose. I speak as a person with almost zero musical ability who built a violin and a lute... ;-) The guitars: those I could play...after a fashion!
