I'd recommend some care if you are considering a chemical paint stripper. Last winter when preparing to remove and replace my kayak's polyurethane I searched for a compatible chemical stripper. Every brand that I checked showed on the label that it would dissolve epoxy. I did not use any stripper.

Good point.
I use 'Greensolv' stripper when I need to remove paint, but it does say it will remove epoxy paints, so perhaps not a good bet to remove varnish over epoxy.
