Gugeons or some other kind of bracket could easily attach through the skin to the gunwales, right? Should I drill the holes and seal them somehow before skinnning? It seems like screws into the wood would be a great place to promote rot.

Bolts through epoxy? The issue there would be that it would be very hard to install nuts and bolts post hoc, where wood screws could just be added whenever. I think the bottom line might be that I should decide what to do before skinning.
