I too would be a little chicken to glass the hatches alone with the hull. I'd suspect you'd end up with non-opening hatches. Epoxy on the wood hatch edes is fine, a couple coats will seal the wood, they don't get much if any direct abrasion and wrapping glass around tight corners isn't fun.
