Thanks all. I think I have enough solutions now!! I do have some West 407 which, according to their selection guides is still Very Good for filleting. I just wanted a few options in case I ran short!!

In the meantime, the skeg retrofit on the Black Pearl is going smoothly. Hope to do the filet tonight. I had to cut ab "access hatch" in the back deck and, hopefully, will have that back in place in a day or two as well.
