I've done quite a few glass seats. You'll be fine with 8 layers of 6 oz. Figuring an equivalent of glass weight, I used to my 4 oz cloth but added scraps and built it up and a final sheet of 4 oz over the whole thing. I blackened the epoxy with graphite powder. it takes a good week for the epoxy to get brittle hard. So don't panic when the seat is a little rubbery for a while.

I did one with glass roving too but it's harder to get it to bend as easily and I think you just use more epoxy wetting it out.
