Material: Fiberglass purchase advice

The members of this forum have so far been immensely helpful and I appreciate it as a new boat builder. (I'm doing the Guillimot single) I'm about to purchase fiberglass cloth which Nick's book says should be 6 oz. He shows the outline of the hull and deck laid out diagonally on the roll of cloth for cutting, to save materials. The book never specifies the width or length needed and this is a bit hard to judge. Raka Marine offers 40 in wide and 60 inch wide or more rolls. Defender industries has similar sizes. The nomenclature is also a bit confusing. Nick refers to bilabial cloth but all weaves are 'biaxial". The web sites offer "plain weave" as a different product than biaxial. Also is the weight given as 6 oz meaning ounces per square yard or per square foot? Also, is it necessary to separately purchase a roll of fiberglass tape or is it easy enough to cut strips from the excess cloth? Thanks for the advice.
