I have to admit that I don't use a longboard either, just the ROS. Nothing is perfectly fair, not even a sheet of glass, it is really a matter of what is acceptable to the individual, and appropriate to the artefact being constructed.

I rarely move the ROS in the direction of the grain.

I keep the ROS moving perpendicularly across the grain and diagonally to the left and to the right as I move along a the hull, especially on chine curves and convex sections, to ensure that I don't thin those areas more than the flatter areas, until all the glue mess is gone from the surface. At that point I regard the hull as fair.

Moving the sander in three directions like this helps in avoiding dips.

Also, using too fine sandpaper to knock off the corners of the strips can result in an urge to press too hard. Not good. As Rob says, rougher paper with less pressure is more conducive to a farer surface.

The rougher paper is even more important if one is sanding an area where accent strips of harder timber lie between cedar. Light sanding with rough paper knocks the harder wood down better than fine paper, which tends to erode the cedar and leave ridges on the accents.
