Generally ski's are launched and retrieved from relatively deep water, so you're not running them up on the rocks, so most any finish should work.

That said, I've had excellent results from the epoxy/graphite/silica coatings, sure it scratches some but never all the way through it. It does though add weight, not something you normally want to add to a ski.
